Coconut Yogurt Breakfast Bowls

I am a big fan of creamy yogurt topped with juicy fruit. When I say yogurt, I don’t mean the strawberry flavored yogurt or the blueberry’s and cream. I mean the straight up, original plain kind that makes your lips pucker and eyes squint on first bite. Less sugar, all creamy goodness!

With the rise in popularity of a $25 pint size jar of coconut yogurt made by the company The Coconut Cult, more budget friendly probiotic filled yogurt options have begun to pop up and it’s driven me to experiment with making my own. Because of this, indulging in my favorite breakfast choice has gotten easier and my tummy is happier!

My first breakfast bowl of choice is either 2 cups of blueberries or strawberries topped with about 1/4 cup coconut yogurt and sprinkled with coconut flakes, hemp seeds, and cacao nibs.

Coconut flakes give it a fresh and slightly sweet taste . Hemp seeds provide a boost of protein. Cacao nibs are high in fiber and good for boosting your mood.

Another ingredient twist I started playing with was 1/4 cup coconut yogurt topped with 1/2 a banana and one sliced kiwi then generously sprinkled with hemp seeds and coconut flakes.

A true taste of the islands right there in your bowl!

Finally, for a more filling option, I made half a serving of my gluten-free multi-grain cereal then topped it with a mango, 1/2 a cup of strawberries, 2-3 tablespoons of coconut yogurt, and a sprinkle of Ceylon cinnamon.

What’s not to like about a good probiotic filled breakfast that also gets you your servings of daily fruit in an extraordinary tasteful way?! I’d love to know some of your favorite breakfast bowls. Comment below and let me know!
