After juicing, I knew I wanted to jump right in to a thought out way of eating. I did Whole30 in August of 2015 and absolutely loved the results. Energy, weight loss, clear skin and a feeling of health and vitality only possible through clean eating.
Sometimes as much as we “plan ahead” life can get in the way derailing our awesome intentions. A trip to the PNW’s food and coffee mecca where “keeping it weird” is the standard protocol – time with family in Portland, OR was much needed – but got my mind off of the clean eating patterns I had set the previous two weeks. I’m not sorry – nope, not one iota. Portland is my sweet spot and a trip there without visiting both seasoned favorites and untried establishments would cause a great heartache. Gluten free treats are on every corner and local coffee shops are more prevalent than Starbucks (praise the GOOD Lord!).
Now, a week later, it’s time to get this health train back on track. Following is my eating protocol that I will be sticking to for X amount of time. Life style eating ya’ll….not gonna put a number of days or weeks on this plan and make it into a “diet plan”.
Guidelines for my Whole30 eating lifestyle – cutting all sugar, refined carbs, dairy and wheat products. Eating a variety of veggies at every meal. Drinking water and tea to satisfy cravings and curb appetite. Nuts and seeds for snacks and crunchy additives.
GOAL – Continue training my mind, body, and tastes to enjoy clean eating.
So far I’m one day in and it feels great to have a plan in place! Make a vision and execute it!
Eating the paleo way opens up so many doors for delicious food. Since when has fat been good for you? Since when did eating something fried not make you gain 5 pounds over night? I look at healthy fats differently now than I ever have before, and I smile…really big. Like Paula Dean who loves all things butter, I love coconut oil and organic butter. Not only does it make things taste better, I no longer have to worry about cutting the pounds on since I’m cutting out all bad sugars and carbohydrates that were messing with how my body processed food. Also, coconut oil doesn’t break down into unhealthy when exposed to high temperatures as 90% of it is composed of saturated fatty acids. Now that we’ve gotten the idea across that fats can be good with you if you use the correct kinds, feel the freedom you now have in the kitchen you might not have ever felt before. One of the recipes I’ve created is fried chicken breaded in almond flour and spices. TO.DIE.FOR. Easy and delicious, this will be a recipe your family will keep asking more for.
3 chicken breasts cut into strips
1/2 cup almond flour
1/4 cup coconut powder
3 tsp arrowroot powder
1/2 tsp salt
1 tsp garlic powder
1/4 tsp paprika
1 tsp onion powder
1/2 tsp Lawry’s seasoning salt
1/2-1 cup coconut oil
Defrost chicken breast and cut into strips of desired size.
Combine all ingredients in a medium sized bowl, set aside. Combine the two eggs in a separate bowl.
Heat oil on low-medium heat.
Dip chicken strips in egg mixture first and then in the flour mixture, making sure to coat all sides.
Place strips into hot oil, keeping space between each piece. Cook on each side 3-4 minutes or when meat has turned white.
Once fully cooked, places strips on plate with a napkin to soak up any extra oil.
